What Makes a Great Bagel

A great bagel is one of the most deceptively simple things in food. The ingredient list is short and the shape is one most people could draw from memory. But the eating experience of a truly great bagel is unmistakable: a thin, slightly glossy crust that gives way to a dense, chewy interior with a pull that holds together under whatever you pile on top. Getting there requires understanding why every step of the process exists, and refusing to skip any of them.

It starts with the dough. A NY-style bagel dough is lean and stiff — no fat, no enrichment, nothing that softens the crumb toward something more bread-like. High-gluten flour and low hydration build the tight structure that defines the style. The dough is mixed to develop significant gluten, then fermented to develop flavor. That fermentation stage is where the subtle depth comes from — the complexity underneath the sweetness that you notice most as the bagel cools.

Then the shape. Every bagel is hand-rolled: the dough formed into a rope, wrapped around the hand, the ends pressed together to seal. This creates surface tension that holds the ring through boiling and baking and contributes to an even, consistent crumb. It takes longer than the alternatives. The result is worth it.

Then the boil — the step that separates a proper bagel from everything else. Before any of them go into the oven, each shaped ring is dropped into a kettle of boiling water. The hot water rapidly gelatinizes the starch on the exterior of the dough, setting a firm skin before the interior has time to expand fully. This is what produces the tight, slightly shiny crust and the characteristic chew that carries from the surface through to the crumb. The duration of the boil is calibrated per variety and adjusted for the conditions of each morning. It rewards attention and punishes shortcuts.

Finally, the bake. The bagels go straight from the kettle into the oven, and from the oven to the counter. We bake every morning before the café opens. A fresh bagel has a crust that gives slightly when pressed, a warm, dense interior, and a smell that fills the room.

Our Story — New Jersey Meets Portugal

Marina was born in Portugal and moved to New Jersey as a child. Andrew spent fourteen years living in New Jersey. Together they developed a deep appreciation for the food culture of the northeast US — and the bagel sat at the center of it.

When Marina returned to Portugal with Andrew to open caféAtaraxia, she brought that understanding with her. The concept of the café is built around combining what they loved most about life in New Jersey — the food culture, the specialty coffee scene, the bagel as a daily ritual — with the pace and character of coastal Portuguese life. Parede, five minutes from the ocean on the Cascais line, is the natural home for that combination: a quieter, unhurried setting where a slow morning with great coffee and a great bagel makes complete sense.

There is also something personally meaningful in Marina bringing the bagel back to the country she was born in. The café is, in part, her bringing the best of where she grew up back home — and making it available to the neighborhood between Lisbon and Cascais that caféAtaraxia serves.

The baseline. A plain bagel has nowhere to hide — it reveals everything about the dough and the process. Ours has a mild sweetness, a tight crumb, and the right pull. Take & Bake — Fresh Bagels at Home

For customers who want the experience at home, we offer Take & Bake packs of six, available for click and collect via the online shop. The bagels are sold par-baked — fully cooked through but without the final crust development — and ready to finish in your own oven. Bake immediately or freeze for later.

Packs are available across our core varieties. Mixed packs can be arranged for orders placed in advance — just let us know the split when you order.
